Ghanem Group’s first interstate Blackbird — a three-level Collins Place venue on Flinders Lane at the Exhibition Street corner, opened 2025 after a Space Cubed Design Studio fit-out. Street-level Flinders Lane cocktail bar with sunken lounge leads to split-level dining rooms and private event floors. Modern Australian cooking from Ghanem Group executive chef Jake Nicolson and Melbourne executive chef Tim Menger (formerly Entrecôte) centres on in-house dry-aged beef, Josper Basque Grill steaks (Sher, Legacy and Pure Black wagyu on the published sample menu), Queensland seafood and native-accented plates.
