Hakata Gensuke’s Healeys Lane room (shops B1–B2 off 550 Lonsdale Street) is the chain’s CBD laneway tonkotsu counter — creamy Hakata pork-bone broth, house thin noodles, and bowls such as Signature Tonkotsu, Black Tonkotsu (fried garlic oil and black sesame), God Fire, and Shio Tonkotsu, plus Hakata hitokuchi gyoza and house chicken karaage. The store page also runs a Kushiage and onigiri pop-up (prawn tempura, unagi, kimchi pork and seasonal vegetable fillings) developed with executive chef Satoshi Yamanaka and Fukuoka-born head chef Kei Ishiura. Walk-in ramen service dominates; Friday and Saturday trade late (official Saturday dinner from 6pm). Public holidays carry a 15% surcharge. This slug is Healeys Lane only — not Russell Street, QV chicken ramen, Carlton yatai, or Perth outlets.
