Ghanem Group's New Orleans–inspired smokehouse, oyster saloon and cocktail bar on Gipps Street — low-and-slow pit-smoked barbecue over ironbark and fruit woods for up to 12 hours, Southern fried chicken, absinthe cocktails and vinyl jazz in a fairy-lit courtyard. The official menu centres on pit-smoked grain-fed Angus brisket, burnt ends, pork ribs and smoked chicken, plus buttermilk fried chicken, wings, and a Wagyu cheeseburger; the Southern Pride banquet ($83pp) runs as a chef's sharing set.
