Since opening on Collins Street in 2010, Mamasita has been Melbourne's benchmark for modern Mexican—not Tex-Mex—in a lively first-floor dining room above street level. Under owner Joss Jenner-Leuthart and executive chef Jimmy Garside (ex-The Apollo), the kitchen skips nachos and burritos for produce-driven snack plates, house-pressed tortillas, elotes, frijoles, tostadas, flautas and ceviches. Cocktail director Eduardo Conde (ex-El Primo Sanchez) runs an agave-forward bar with daily-pressed limes for the signature Margarita Mamasita. Black-and-white tiles and grand Collins Street windows remain from the original fit-out; walk-ins and SevenRooms bookings welcome seven days for lunch, dinner and drinks.
