About Us

Taqueria Sin Nombre — Spanish for taqueria without a name — is Dingo Ate My Taco's first Melbourne bricks-and-mortar, tucked off Celestial Avenue in Chinatown beside Supper Inn and One or Two. Co-owners Kady Simkins, Paul Walcutt and head chef Isaac Castellano press daily masa on a tortilla machine imported from Mexico, shave al pastor from a hand-spun trompo, and grill kangaroo asada and rib eye over a Brick Chef hibachi. The intimate dining room has terracotta tiles along an open kitchen pass where guests sit on bar stools facing the cooks; vinyl plays through custom Pitt & Giblin speakers. The in-venue menu board changes often and is not published online — al pastor stays constant while birria, brisket, kangaroo asada and vegan specials cycle. A hand-peeled salsa bar, mezcal cocktails and Sol, Negro Modelo and Melbourne Bitter beers are on pour (Broadsheet, Apr 2026).
